Basic fudge brownie mix


  • 2 sticks unsalted butter
  • 2 cups white sugar
  • 4 whole eggs (large)
  • 5 ounces semisweet chocolate
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

To make

  • Preheat oven to 350 degrees
  • In a saucepan, melt butter and chocolate over medium heat
  • Remove from heat and then add sugar, stir in well
  • After the mixture slightly cools off, combine eggs one at a time and add vanilla (I like to use a whisk)
  • Combine flour and salt, then add to mixture
  • Bake 30 to 35 minutes, until baked through (use a toothpick test)
Want to jazz up the brownies? You can add walnuts and whole chocolate chunks (my favorite)
To add a mint layer
  • 2 tablespoons unsalted butter, softened
  • 1 cup confectioners sugar
  • 1 tablespoon (maybe a splash more) heavy cream
  • 1/2 teaspoon peppermint extract or creme de menthe
  • optional green food coloring
To make:
  • combine ingredients in a bowl with a hand blender, spread over cooled brownies
  • place in fridge for 10-15 minutes
  • add a combination of 3 oz. melted semisweet chocolate and a tablespoon of butter, pour over mint layer
before baking brownies, make a cheesecake of peanut butter swirl

Peanut Butter Swirl Ingredients

  • 1 cup(s) creamy peanut butter
  • 1/3 cup(s) sugar
  • 4 tablespoon(s) butter or margarine
  • 2 tablespoon(s) all-purpose flour
  • 1 teaspoon(s) vanilla extract
  • 1 large egg

Cheesecake Swirl Ingredients

  • 1 1/2 package(s) (8 ounces each package) cream cheese, softened
  • 1/2 cup(s) sugar
  • 1/2 teaspoon(s) vanilla extract
  • 1 large egg
To make:
  • Peanut Butter Swirl: In medium bowl, with mixer at medium speed, beat peanut butter, sugar, butter, flour, vanilla, and egg until well blended.
  • Spread 2 cups chocolate batter in pan; top with 6 large dollops of peanut butter mixture. Spoon remaining chocolate batter over and between peanut butter in 6 large dollops. With tip of knife, cut and twist through mixtures to create swirled effect.
  • Bake as regular brownies
  • Cheesecake Swirl Browniesto prepare Cheesecake Swirl: In small bowl, with mixer at medium speed, beat cream cheese until smooth; gradually beat in sugar, vanilla extract, and egg just until blended.

    Complete recipe as in steps in brownie swirl, substituting cream cheese mixture for peanut butter mixture in step 4.
